Chicken Enchiladas

This recipe is quick and easy. We usually have frozen chicken tenders that we have purchased from Costco. Mix this with a garden salad and your set.

Ingredients:

4 c. chicken breasts

2 cans cream of chicken soup

1 pt. sour cream

1 can diced chilis

1 tsp. (your favorite) cajun seasoning

2 c. grated cheese

Tortillas

Preparation:

Dice and cook chicken. Add soup, cream, chili’s and seasoning. Fill tortilla and roll. Place into rectangle casserole dish, grate cheese and any extra mix on top. Bake at 350 degrees for 30 minutes.

For best results top with homemade salsa.
