Quick and easy Navajo Tacos

We always have Rhodes frozen rolls in our freezer.

We also steam and puree vegetables as close to once a week as we can. (gotta love puree’s, more recipes to come!)

Ingredients:

2 lbs. Ground beef

1 c. Tomato puree

1 c. Red pepper puree

2 tbs. Taco seasoning

Frozen pre-made rolls

Lettuce

Grated cheese

Sliced tomatoes

Avacados

Vegetable oil

Sour cream

Salsa

Preparation:

Place as many frozen rolls as your family will eat on a plate about 20 min. before you need them. Let them thaw. (or if you’re in a hurry… pop them in the microwave for about 45 seconds, and they’ll be ready to go!)

Directions:

Place 2 sauce pans on the stove over medium heat. In one sauce pan pour in about a quarter inch layer of vegetable oil and let sit. In the other add ground beef, tomato puree, and pepper puree. Stir in taco seasoning, let cook, stirring frequently.

While meat is cooking, chop and clean lettuce, grate cheese, and chop tomatoes.

Once oil is hot, take thawed roll and stretch (without pulling apart) until dough is pancake size. Place dough in oil and watch until bottom starts to turn light brown, then flip. Once both sides are done and frozen roll magically turns to scone take out of oil and place on paper towel.

Dish taco meat on scone add toppings, dab sour cream on top and enjoy.

Substitute:

We have also been known to substitute taco sauce for a can of chili.
