Yummy-Soft-Delicious-DidImentionYUMMY Sugar Cookie Recipe

I love sugar cookies! They are one of my downfalls. That is why I only make them a couple times a year. And, yay for me, and you, Halloween is one of those times!!! If you love soft and fluffy sugar cookies this recipe is for you.

Ingredients:

1 cup margarine

2 cups sugar

2 eggs

2 tsp. vanilla

5 1/3 cups flour

2 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

1 cup sour cream

Heat oven to 425 degrees. Mix margarine, sugar, eggs, and vanilla thoroughly. Blend dry ingredients. Add flour mixture alternately with sour cream to the wet ingredients. Divide dough and roll out 1/4 inch thick and cut with cookie cutters. Place on well greased cookie sheet and bake for 8-10 min. Frost and enjoy.

(Note: I only baked mine for 7 min cuz I like them soft)

I have tired many many many bread recipes and this one is my favorite! Although, I think all the other recipes had more to do with me than the actual recipe. I had a good friend show me how to make her rolls one day and I learned alot about making bread from her. Some of the things I learned: Keep your yeast in the freezer, it will last forever. And then use hot water instead of lukewarm water (because the yeast just came out of the freezer.) Never add as much flour as the recipe calls for. Start with about a cup less, and add little bits at a time, until the dough starts pulling away from the sides of the bowl. (The dough should be very soft and a little sticky if you like light and fluffy rolls.) Just a few tricks that my friend shared with me that I shared with you. Now on to the recipe.

Bread/Rolls Recipe:

2 tbls. oil

1/2 cup sugar

3 tsp. salt

3 cups lukewarm water

3 pkg. yeast (2 1/4 tsp. equals one packet of yeast)

2 eggs

8 cups flour

Mix together in large bowl the oil, sugar, water, and salt, then add yeast and mix. Let set for 5 minutes, then add eggs (beaten). Add flour. Grease bowl transfer dough and let rise 1 1/2 hours. Knead: put in pans, or roll out and shape rolls. Let rise again until double in size. Bake at 350 degrees for 35 minutes. (If making rolls bake for 20 min, or until golden brown)

This is what your rolls should look like after they have started to rise.

And this is what they look like after they come out of the oven. ENJOY!

2 tsp. chili powder
taco fixings

Cook and drain ground beef. Add salsa and chili powder. Cook until heated through. Make taco’s as you see fit! I prefer soft shells, but my hubby loves hard shell.

Mix the mayo and the coleslaw dressing together. Add all other ingredients. Mix until combined. Refrigerate.

I usually only use about 1/2 of the bottle of coleslaw dressing. I also usually use the canned chicken from costco or a rotisserie chicken, cuz I am too lazy to cook the chicken:)

*aka* WAY NUMMY!

At our house, it is at least a once a week breakfast or lunch item. For breakfast we eat it with powdered sugar and homemade maple/vanilla syrup. For lunch, we melt provolone or swiss, ham, mushrooms, and whatever else we have!

We also add puree to them to help make them a tad bit healthier! (Since we use white flour usually instead of wheat, as mentioned above!) If you’re careful not to add too much, you can’t even taste it!

Recipe

1 1/2 c. Flour

1 Tbs. Sugar

1/2 tsp. Baking Powder

1/2 tsp. Salt

2 c. Milk

2 Tbs. stick butter melted

1/2 tsp. Vanilla

2 eggs

1 C. Puree of choice! (today we used squash. we’ve also tried spinach, which is fun on St. Patti’s day, carrots, and cauliflower (which was probably the most noticeable, and not very good!))

Mix all ingredients together, and pour onto greased frying pan in a thin layer. Cook it like a pancake. But they are so thin, they don’t take long, so don’t burn it!

Home made syrup…

2 c. Sugar

1 c. Water

Stir until it boils, add 1/2 tsp. vanilla, and half tsp. maple!

VOILA! Yummy Yummy!

(don’t let the crappy picture fool you, these are delish!)

ingredients:

1/3 cup mayonnaise
1/4 cup chopped cilantro
3 scallions, sliced very thin
2 celery ribs, chopped fine
2 tbsp sour cream
2 tsp hot sauce
2-3 cups shredded chicken
2 cups shredded cheddar cheese
tortillas

1. Whisk the mayo, cilantro, scallions, celery, sour cream and hot sauce in a large bowl. Add chicken and toss to combine.

2. Heat a large non-stick skillet over medium heat for 1 minute.

2. Place tortilla in skillet. Arange chicken mixture on one side of the tortilla, cover with cheese. Fold the tortilla in half and cook until slightly brown, and the cheese is melted.
